We made it through Snow-Mageddon 2019. And since I was so tired of looking at the snow outside, I decided to turn snow into something more fun, Walnut Snowball Cookies! It was crazy cold here in Chicago-land with 10 inches of snow to start the week, -40 degrees (with the wind chill) mid-week, and then temps raising again back to 45 degrees at week end. The temperatures were so low that kids were home from school 4 out of 5 days which makes for a rumpus every single day. Forget about getting any work done. And as some of you may know, ZenSweet is growing!!! We have a huge sales meeting coming up with Kroger in a few weeks, so cross your fingers for us. ZenSweet and ZenSweet Baking are really going nationwide soon. All the momentum is awesome and also a challenge with two little ones still at home, especially when they are home all the time.
Most parents around here were ripping their hair out by Thursday. But, you know what, we found a lot of time to get back to basics. We did a lot of cooking, reading, cuddling, baking, art projects and then we’d pretty much repeat that process again. We did bake a lot and it was really fun. Since we spent most of our Fall and Christmas season renovating and moving into our new house, we haven’t really had that much space to bake. And the ZenSweet family loves to bake. It is so much fun. Aside from arguing over who gets to stir or crack an egg, we have a lot of fun together. It’s a great way for family to connect and for anyone to get grounded.
So at the height of the cold, mid-week, we literally could not go outside. The weather reports were stating you could get frost bite in a matter of seconds, so we didn’t take any chances with the -40 degrees. Most families around the area were doing science experiments throwing boiling water into the air to see it evaporate instantaneously, or blowing bubbles and watching them freeze mid-air. What did we do….made three new kinds of cookies and dream up ideas for new ZenSweet products!
The kids had a blast making sugar cookies and decorating them while I worked on refining a cookie recipe I made over Christmas that was my absolute favorite. The Walnut Snowball Cookie.
