Spring is Here!!! Finally…..the weather is slowly warming in the Midwest. The rain has set in and that isn’t super fun, but honestly, I kind of like how it reminds me of our years spent living in Northern California. I can still imagine myself taking long, tranquil hikes in the misty redwood forest, or letting our dog Nala run on the beach for hours while we searched for agates. We had amazing friends and some of earth’s most pristine natural beauty around us, so the rain never really got us down (with a little help from our Vit. D supplements 🙂
This past weekend my baby cousin, Sarah, had her bridal shower. I can’t believe the last of the cousins on my side of the family is getting married. The party was adorable with Bingo during present opening, a Bloody Mary bar, great food, and a delicious Berry Cake. The Berry Cake was from Whole Foods, and I’ve actually bought it there before because it is absolutely heavenly.
So, with all the rain this past week I decided to hunker down and bake this Vanilla Custard Berry Cake. The recipe is a bit tedious, I’m not going to lie, but it is totally worth it! The Vanilla Bean Custard is divine- it is light, fluffy, and so delightfully filled with rich vanilla flavor.
The Vanilla Bean Custard was our favorite part of this recipe. You can simply make this custard and serve with fresh fruit to create a great Easter dessert. I promise you will impress your friends and family as they will never know this heavenly rich custard is sugar free. I’ll be bringing more recipes using this custard because it was just so delicious.
