Some weeks are just so busy I fall behind on planning and therefore cooking good tasting, healthy meals. The last few weeks have been so crazy with traveling across the country for ZenSweet and new gymnastics and ballet classes for the kids. I know most people, families or not, are struggling with busy schedules.
I came across a recipe by Primally Inspired that I adapted to be completely sugar free. Honestly, it doesn’t take much recipe adaptation when you have ZenSweet because it truly measures and tastes like sugar. ZenSweet isn’t just for desserts, it makes great sauces, marinades, and dressings also. We’ve really phased most hidden sugar sauces and marinades from our pantry, so I do not find myself needing them anymore. But, ZenSweet makes such amazing sugar free sauces that I really need to post more recipes using it.
Some examples of sauces we all use often that contain a lot of sugar:
- Tomato sauce
- Pasta sauce
- Sweet chili sauce
- Barbecue sauce
- Teriyaki sauce
- Mayonnaise for coleslaw and potato salad
This recipe for Teriyaki Asparagus Beef Stir Fry can be made in one pot and only takes about 20 minutes from start to finish. It is really delicious. So delicious in fact that Corey said if he were at a restaurant, he would go back every day and order this dish! The kids really liked this recipe also so I think I’ll be putting it into regular rotation. You can serve this Beef Stir Fry over riced cauliflower and add some red pepper flakes or chili sauce for extra spice.
