Thanksgiving is right around the corner, I can’t believe it! This recipe for Pumpkin Pie Mousse Trifle is light, fluffy, and a great alternative to the old pumpkin pie. Even better, it is Low-Carb, Keto and Sugar-Free!
I love cooking and baking for the holidays, but sometimes, even for a foodie like me, it can be daunting. I like to try a few recipes ahead of time if I can. After a few failed pumpkin recipes, this one came out perfect. I actually made this Pumpkin Pie Mousse Trifle on Halloween, and it was so much better then any candy we could have eaten.
This Pumpkin Pie Mousse Trifle is slightly sweet with a hint of autumn fall spice. You can use any type of liquor in the recipe, I think rum or whiskey is probably best, but you can use apple cider or even orange juice. I did not have either of these in the house so I used Journeyman Distillery’s Old Country Goodness Apple Cider Liqueur. It was so delicious that I would suggest trying to buy some specifically for this recipe and you’ll be happy to drink the remainder as the tastiest fall drink you’ve ever had. The type of liqueur or juice you choose is important because the flavor will come out slightly in the pumpkin mousse so choose wisely.
The other thing I love about this recipe is it is relatively quick and very easy to create. I made this recipe while the ZenSweet kids were running around getting dressed for trick or treating. If I can do it with two small, very zealous pre trick or treating kiddos then I promise you can too! We are extremely health forward in the ZenSweet Life so, you’d think we would not go trick or treating. But, I just can’t say no to two cute, little kids who just want to do what everyone else is doing. I really wish the dynamic of Halloween and the holidays in general would change to be less sugar-centric, but that’s probably a long time coming.
So, basically, we went out with flashlights for the fun of it, and when we got home, the kids traded in their candy for a small toy and this deliciously healthy Pumpkin Pie Mousse Trifle. I mean who can turn down heaping cups of mousse, chocolate and whip cream?!?! The presentation is simply beautiful and perfect for company on Thanksgiving or any Fall gathering. We hope you enjoy this recipe as much as we did.
Ingredients
- 5 large egg yolks
- 1 1/4 cup ZenSweet
- 3 1/2 cups heavy cream
- 15 ounces canned pumpkin
- 2 teaspoons vanilla extract
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon Real salt
- 2 Tablespoons Journeyman Apple Cider Liqueur or dark rum
- 1 teaspoon powdered gelatin (Vital Proteins)
- 3 ounces shaved dark chocolate
Instructions
- Fill a large bowl halfway with ice water and set aside
- In a medium saucepan, whisk the egg yolks, 1 cup ZenSweet, and 3/4 cup heavy cream
- Heat over medium-low for about 8 minutes, while stirring continuously with a rubber spatula, until thickened and the mixture coats the spatula
- Transfer to a medium bowl and set over the ice bath
- Stir to cool
- Add pumpkin, vanilla, spices, and salt to the egg mixture
- Stir 1 tablespoon liqueur and 1 teaspoon gelatin together in a small bowl
- Heat the remaining tablespoon of liqueur and stir in to the gelatin mixture until dissolved
- Gently whisk into the pumpkin mixture
- Beat 1/2 cup cream to stiff peaks and fold into pumpkin mixture
- Pour into a shallow dish, cover and chill until cold and thick enough to fall from a spoon in heavy dollops about 4 hours to overnight
- Beat the remaining cream and 1/4 cup ZenSweet to stiff peaks
- Alternately layer the pumpkin mousse, shaved chocolate, and whipped cream in one large or multiple small glass serving dishes
- Sprinkle more chocolate shavings on top
- Serve chilled
