This delicious recipe for Peach Breakfast Scramble is adapted from a book I just finished reading, “The Paleo Solution: The Original Human Diet” by Robb Wolf. This was the first real hardback book I’ve read on the Paleo diet. And although I knew a lot of the basic information from self-guided research, I still loved this book. Robb’s humor is awesome. He discusses what could be difficult to understand nutrition science in a witty, simplistic way. You definitely do not get bored with the science behind the Paleo diet and in fact, can’t wait to keep reading and learning.
We are both Northern Californians. I consider myself a Northern Californian after living in Arcata/Eureka for nearly 10 years, and my formative years at that. When I describe where we lived, it was Far North or as we call it NorCal. It warms my heart knowing that Robb Wolf is from the remote Redwoods of far NorCal and became a leader in the nutrition world. There’s hope for me too I guess!
The side note to this recipe is…my Mom is looking to start eating more like our ZenSweet family, Paleo/Primal with little to no sugar. She is not a big fan of eggs, and eggs are well, an easy, high protein, go-to food in the morning or any time really. In Robb’s book, he has a recipe for a peach and egg scramble. So I decided to sweeten up this recipe with some ZenSweet and see if it could be an alternative for my Mom that didn’t taste too much like plain old eggs.
This recipe is delicious and extremely simple to make. I’ll bet you can make this recipe with other seasonal fruits like pears and apples. Peaches looked perfect, and were actually organic the other day at Whole Foods, so I decided to stick with peach for the fruit. I think this recipe tastes like fresh peach cobbler, and feels like a delicious treat for breakfast. This Peach Scramble curves my craving for anything sweet for the rest of the day, and is a very filling while nutritious way to start the day.
This recipe can easily be doubled, which serves more like 2-3, or increased more for a larger group or family.
