The holidays can be a very busy time. I like to have quick and easy recipes that yield leftovers like these Paleo Chicken Meatball Poppers on hand at all times.
I consider the “holidays” to be the time right before Halloween until after New Year’s, and that’s kind of a long time. With a bustling family and growing business things can get pretty crazy at times. This year, I’m striving to have all Christmas preparations done early. We’re doing so much traveling this year, which is awesome, but makes me a little nervous about having everything in order. Part of me wants to just surrender, but I’m kind of a perfectionist so…I’ll be doing a lot of planning and prepping. We’re traveling out to Arizona over Thanksgiving time for two weeks because Corey’s parents moved there last Spring. By the time we get back, it will be the beginning of December and then it’s lots of little trips and activities right up until Christmas day.
This is why simple, leftover-friendly recipes like these Paleo Chicken Meatball Poppers are awesome. The nice thing…these meatballs freeze really well. So, when I make them, I like to make a double batch. The sauces given in this recipe really make it special. It’s so fun for kids and adults to have multiple dipping sauces to try when eating these poppers. Make a quick salad and that’s really all you need to have a complete, filling meal.
I’ll be making a few batches of these meatballs for family dinners, and to put out as an appetizer at some holiday gatherings. I hope you enjoy the ease of this recipe and your friends and family can enjoy your efforts creating real-good home cooked food!
