It’s the middle of summer and strawberries are in AbunDance! Yum! We eat about a pound a day and Dance in the sunshine, literally. This Mini Strawberry Galette recipe is a nice way to celebrate the plethora of summer strawberries.
We absolutely love strawberries in our house, in fact, the kids really don’t like any other fruit besides berries. And, in a way, I should be thankful because berries (raspberries, blackberries, and strawberries) have some of the lowest sugar content of all fruit. These Galettes could be made with other berries, but the strawberries we’ve found at the store are so ruby red and sweet that it was the best seasonal choice. I can’t believe that the price of organic strawberries the last few weeks have been the same price as conventional. So people come on-there’s no excuse not to buy organic. Many farmer’s markets have beautiful, farm fresh strawberries also. Unfortunately, outside of Chicago (our current home town) we do not see many strawberries at farmer’s market like we used to in Northern California. You can imagine how ecstatic I am to see such beautiful berries at a reasonable price at our local Trader Joe’s (my family run/co-op grocer replacement).
This recipe can be made into 6 mini galettes which works nice if you’re having a party, have small kids (who always want their “own”), or want to bring a few to a neighbor (especially pretty much the best neighbors of all time- who lend you an egg, like our neighbors Jeff & Susie). You can also make one large galette, which is a bit easier and less time consuming to roll out.
We hope you enjoy this recipe as much as we do! By the way, don’t worry if you’re galettes aren’t perfect in shape, or even crack and crumble a bit. As Corey would say, it looks homemade that way, which usually equates to a more delicious recipe anyways. No matter how you cut it, this Grain Free Galette is truly a simple, rustic, beautiful presentation of one of summers abundant pleasures-STRAWBERRIES!
