I know I’ve mentioned how much we LOVE Chocolate. This Life By Chocolate Cake is really an ode to the ZenSweet Family’s love of chocolate. It’s almost criminal how we choose chocolate over any other flavor for dessert. But, to be specific it has to be dark…DARK…Chocolate. As a child, I did not like dark chocolate that much, and I remember my mom loved dark chocolate (and still does). It’s funny our kids actually love dark chocolate, I mean, they don’t really discriminate and would eat milk chocolate or any kind of chocolate really. But, it makes me feel better giving them dark chocolate and raw cacao in their homemade milk chocolate or smoothies.
There is a difference between your average cocoa powder (whether alkalized or not) and cacao, especially raw cacao. Raw cacao powder is made by cold-pressing unroasted cocoa beans. The process keeps the enzymes in the cocoa alive and removes the fat (cacao butter). Cocoa looks the same but it’s not. Cocoa powder is raw cacao that’s been roasted at high temperatures.
The Antioxidants in cacao protect the body from ageing and disease caused by free radicals. Raw cacao contains up to four times the antioxidants of traditional cocoa powder, and has the highest antioxidant value of all the natural foods in the world.
So…if and when you can, swap raw cacao for cocoa powder…Go For It! Cacao is not that much more expensive than high-quality cocoa powder anyways and has great flavor. I find raw cacao to be more like dark chocolate.
While we’re on the topic of chocolate, I must tell you, I am a complete sap for really, really good, chocolate cake. There’s a steakhouse near us that has a great Death by Chocolate Cake. It has layers of light, fluffy, dark chocolate cake filled with smooth, creamy whipped chocolate mouse and completely covered in dark chocolate ganache. YUM…Right!!!
So this recipe for Life by Chocolate Cake is my replacement for this delicious restaurant classic. And, bonus, this recipe is packed with raw cacao (or cocoa if you choose) and is sugar free, grain and gluten free, and no one will ever know it’s healthy!
You can easily make this recipe Vegan by swapping these wet ingredients for the ones listed on the recipe card: 1 cup of water mixed with 1 teaspoon white or apple cider vinegar and 1/4 cup of oil. Be sure to use a vegan chocolate chip for the ganache and wha-lah! you have a delicious Vegan Life by Chocolate Cake!
