This Easter Bird’s Nest Cookie recipe makes a delicious dark chocolate, sea salt, caramel, no bake drop cookie that can really be made any time of year. Simply drop tablespoonfuls onto a lined baking sheet. But, for Easter the no bake “dough” can be formed into sweet lil’ bird’s nests.
As little girls, my sister and I would make all sorts of fun treats around Easter time with my Grandma. She was the best cook in the world, well second to my Dad. Baking with my Grandma was always so much fun because she was patient and didn’t mind if we made a bit of mess. I’m not exactly sure what recipe my Grandma used for Easter Bird’s Nest Cookies, but I created a grain free, sugar free version that has a superior taste profile to the old-fashioned sweetened coconut and milk chocolate stand-by. I thought this new healthy recipe would be a fun tradition to start with our family and a way to remember all the fun I had with my Grandparents as a child.
This recipe is “No Bake” which makes it pretty easy to tackle while making a simple dinner. To make this recipe more kid-friendly, I pre-measured all the ingredients and let Adeline put them in the pot and the mixing bowl. After the mixture cooled in the fridge a while, kids can help form the “dough” into little nests and place jelly beans in each one. Placing the jelly beans was Adeline’s favorite part because she was allowed to eat just a few. For a completely sugar free option, you can replace the jelly bean bird eggs with hazelnuts or macadamia nuts. This time we went for jelly beans because the colors made this recipe a bit more exciting for kids. We use Surf Sweet Jelly Beans because they are as natural as I can find. Surf Sweet Jelly Beans contain no artificial colors or flavors. I really don’t want sugar in our life at all, but I also don’t want to create a huge stigma around it for our kids. So, I figure 2 jelly beans at less than 2 grams of sugar total is o.k. once in a while.
