Cauliflower Fried Rice seems like an old standard now that so many of us have jumped on the Paleo/Primal Bandwagon!! However, this recipe for Cauliflower Fried Rice is a little different in that it is super quick and easy to make and has a bit of flavor flare from the addition of cilantro, basil and pineapple. I really like the frozen organic riced cauliflower from Trader Joe’s (TJs as I call it), and that is what helps make this recipe quick. Since we’ve been living in the Midwest, Trader Joe’s has become somewhat of my Co-op and family-owned natural market replacement. Their product assortment tends to change, but I sure hope the frozen organic riced cauliflower is a product they keep on the shelves for a while. If you do not live near a TJs, you may be able to find fresh riced cauliflower at your local market, or if need be, you can rice 1 large head of cauliflower in your food processor or blender.
