We actually had a relatively cool day a few weeks ago here in the Midwest, and I was really craving a cake-like dessert. I decided it was cool enough to turn on the oven. A Caramelized Banana Upside-Down Cake sounded amazing.
It’s challenging to write recipes for a “healthy sugar” product and the ZenSweet Life blog when most sweet recipes are baked. Corey’s a stickler when it comes to turning the oven on if the temperature is anything above 75 degrees outside. Needless to say, the summer is challenging for bakers.
I have yet to master ZenSweet Ice Cream, but plan to do so very soon as well as bring you other no-bake desserts. But, this specific afternoon we wanted cake!
This recipe is relatively simple and eye catching with a spiral of banana slices on top. It’s a nice alternative to the standard pineapple upside down cake. It is a great cake to bring to a pot luck or make for a party because it’s just a little different and delicious. You can serve this Caramelized Banana Upside-Down Cake with fresh whipped cream, coconut cream or ice cream if you desire.
