There are some foods that you miss once you go Primal/Paleo. And…fluffy, berry filled, syrup drizzled pancakes are one of those foods for me. This past weekend, I woke up on Sunday morning to the delicious smell of fresh bacon cooking and two happy, quiet little kids. What a great partner I have! I was so happy and thankful that with my heart as light as the Spring air, I could think of only one thing…Berry Bliss Pancakes!!
Everyone was getting hungry, so, I hurried to think of a quick way to cook up some grain free, sugar free, berry laced pancakes. This is a pretty quick, easy recipe. There are quite a few extra ingredients compared to a traditional pancake recipe, but that’s ok. The recipe makes about 5 medium/large pancakes, so if you have a big family or are making this for a lot of people, I suggest you make a double batch.
These Berry Bliss Pancakes are light in texture, heaping with fresh berries and just sweet enough. With only a side of bacon or sausage, this makes for a pretty filling breakfast. While you are cooking the pancakes, you can keep the finished ones warm on a piece of parchment paper in a 200 degree oven.
When all the pancakes are cooked, slather in grass fed organic butter, drizzle with strawberry syrup, sprinkle with more fresh strawberries and blueberries and place a dollop of organic full fat Greek yogurt on top. Wha Laa! I promise, you’ll be sure to feel Blissed-Out upon eating these amazing pancakes!
